As for a large stone wheel, there are old pictures of grinding wheels that are foot powered. I was thinking more of the pto attachment on a tractor for a wheel that size. I would think a huge stone wheel like that would have a lot of momentum and not require a lot of power to start it spinning. But again I was asking for suggestions and you have pointed out some areas that use readily

Make sure that it’s harder than the material of your grinding wheel. To use it, push it against the wheel and then move in back and forth (as you would do when sharpening a chisel). A star dresser is faster than a stick but with the latter, you can get a cleaner job. If you work with a light touch, you can get a very smooth surface on your grinding wheel with a dressing stick.

08/06/2012 I fabricated pieces missing to produce the pedal power, then working the wheel dry and handholding a 4 1/2" angle grinder with metal grinding disc, pedal powered the wheel and moved the grinder back and forth, was able to smooth out the groove probably 1/4" deep or more and removed a big portion of the out of round, still need to remove more but stone is able to put a nice edge on kitchen
13/06/2020 To be crystal clear, after a wheel grinding session, the straight blade section will not be 100.0% straight anymore; this can be easily confirmed by a subsequent honing test on a mean-flat ceramic stone. Never mind the grinding wheel, this phenomenon is equally true for grinding a straight blade heel section on a guided sharpening system
